Setting up my 69

OK so I've never set up a boat before but I know I don't like the way mines currently set up. It's a 1969 v191 with a 1978 merc 175. When I get going wide open and try to trim it up a little she starts rocking back and forth(not chine walking), if I don't trim her down or back off it gets worse. The previous owner who owned it for 30 years told me he runs it with the engine down all the time. I also wanted to know what type of prop I should be running it currently has a three blade cleaver that seems to go pretty good but cavitates quite a bit, the other is a 27p small ear chopper.

By the way I want it to ride like it does in it's racing picture on the left. I know I don't have the twin 125's but...
 
I'll take a stab at it.

What speed are you seeing now?

When the boat starts to rock back and forth at speed, it is chine walk.

there are a couple things that can contribute to this.
1) loose steering
2) worn out motor mounts
3) anything in between

Most v hulls will encounter this at higher speeds, even with a proper setup. You will have to learn how to "drive through" it. There is more there.

Shoot, I felt like one of the Duke Boys in my Predictor. I was back and forth on the wheel so much. Chris installed solid mounts and said it made a world if difference.

Adding setback will also help the walk.
