Water Temperature/pressure

Not sure if this is the right thread, but anyways. This summer I put a 10" hyd. jackplate on my boat and now I want to put a temperature gauge and pressure gauge in my boat. I was routing around the engine last night and noticed there wasn't an extra plug on the top of the engine like my last boat/engine. The only spot i could see that i could possibly place the temperature sending unit is in the head between the spark plugs(but that doesn't go down into the water jacket). Not quite sure where else i could place it.

And for the the water pressure did you guys "T" the hose going to the top of the engine?

I have a 93 XR1 EFI engine.
