Would Bob's 2 inch setback spacers make sense?
No you need to go up and back, the 2" spacers just go back. The more you go back the more you have to go up. I can't seem to post pics or I would of my set up.

Would Bob's 2 inch setback spacers make sense?
Ok. Best options sounds like Bob's setback because it also gives you 1.5 to 2.5 of lift. Just have to decide if I go 4 or 6 inches with the 8 inch jack plate. I guess I should check all my lines to the engine to make sure they can take the extra 4 to 6 inch.
Kushog Do you know if I can pick these up anywhere in Canada or best to go direct to Bob's in the US.
ordered 4 inch set back bracket from Bobs.
Guy talked me out of the 6.
You might be right. The big question now is to set the height.
Do I set it at 1.5 hole option or 2.5
Part here on Monday. I will see if I can fine tune jack and trim for close to 27" from tip of cone to pad, 1 3/4" above. Although a 20 may act different than a 21 but I will be in the ballpark. Thanks for everyones help.

Wow, I need to look at this post more often! A lot has happened since I last checked it. I'm subscribed now.
I have a Pulsare 2000 BRX with an 8" hydraulic plate and just put another 8" setback on Saturday. So right now I have total setback of 16" and at the top of the hydraulic plate my prop shaft is 1" above pad. Haven't had time to tinker with the setup yet but literally within 3 minutes of starting the motor I had it easily doing 70 MPH with more to go. It had no noticeable chine walk and this was with the bowrider cover off, a 27" Laser II prop, and stock Verado gearcase with torque tab that I made out of JB Weld SteelStick. Of course I am by no means done as my setup is still quite slipshod at this point, but putting the motor up and back is definitely the key.
Now that I have read all these recent posts though, I see that I should have used the bottom bolt hole on the motor bracket and I used the middle. So next I'm going to move the motor to the bottom bolt hole and re-adjust everything so the prop shaft is 2" above pad when the hydraulic plate is at the top. I'm also going to block off the top four water inlet holes on both sides so I can maintain water pressure at that height (the Verado case has four water holes on the front of the nose cone too). Then once I have the obvious flaws in my setup sorted out, I might lean on kushog's generosity and make the 20 minute drive to his lake to give his Scorpion a try!
Here's a pic of my current setup:

Looks great, how the hell do you post a pic? Says I'm not able to? Your set up should go fast enough to blow out that case, I'm thinking 90 with the right prop, can you say Sportmaster lol! That's the gist of it the way your set up, two plates or a bracket with some lift. The plate is nice because of adjustability, a bracket only might be a bit lighter. Can't wait to see the whole rig!
